Can I bill a package that runs over several days?
Yes. Record each day as you go and the amounts add into one invoice for the booking, so the family gets a single clean bill instead of daily slips.
What about night halt and driver allowance?
Add them as charges on the trip alongside toll and parking. They appear as their own lines on the invoice, which is what stops the argument at settlement.
